A good friend of mine informed me of this warm, cosy and very morish dish. I have tweaked it a bit and the results are good. The cauliflower and broccoli compliment the flavours in the sauce perfectly and if your cheating, crush up some cheese n onion crisps and sprinkle some grated chedder over the top prior to grilling.

 Ingredients:      Serves:    2-3

    

  • 2 salmon fillets (skinless & boneless)
  • 4 florets of broccoli & cauliflower
  • 1 tbsp plain flour
  • 1 tsp mustard
  • 300ml semi skimmed milk
  • 30g butter
  • 50g grated canadian cheddar
  • 2 peeled garlic cloves
  • 2 pinches of dill
  • 2 fresh sprigs of rosemary
  • 2 thin slices of lemon & juice
  • salt n pepper

  • *30g cheese n onion crisps - crushed(optional)


 Method

1. Place 4 large florets of cauliflower into a steamer and set time for 25 minutes. Then wrap each salmon fillet with salt n pepper, squeeze of lemon juice, dill, sprig of fresh rosemary, garlic and a slice of lemon in foil.

2. After 5 minutes (with 20 minutes to go), place the salmon foil wraps into the steamer and then add 4 large florets of broccoli into the steamer with the cauliflower.

3. When the steamer has five minutes to go, pre-heat the grill on a medium to high level. Grab a small saucepan and melt the butter. Add a half the milk then stir in the flour. Then add the rest of the milk, mustard and half the grated cheese. Bring to the boil, reduce heat and stir until it thickens.

4. Remove the broccoli and cooked cauliflower to a casserole dish and pour over the sauce. Sprinkle over the remaining cheese and cheese n onion crisps (optional) and place under the grill until the cheese has melted.

5. Serve with the cooked salmon and enjoy.
