This is a bit of a hybrid recipe from the previous Salmon And Vegetable Gratin recipe. Basically you replace the cauliflower with pasta shells, flake the salmon and mix with sauce and diced broccoli florets. Surprisingly it works very well. If cheating you can add cheese and crushed crisps of your choice and grill for 5 minutes. Please note: This is a calorie heavy dish, if your on a low carb diet you may want to avoid. The fats are mainly good fats.

 Ingredients:      Serves:    2-3

    

  • 2 salmon fillets (skinless & boneless)
  • 4 florets of broccoli & cauliflower
  • 1 tbsp plain flour
  • 1 tsp mustard
  • 300ml semi skimmed milk
  • 30g butter
  • 50g grated canadian cheddar
  • 2 peeled garlic cloves
  • 2 pinches of dill
  • 2 fresh sprigs of rosemary
  • 2 thin slices of lemon & juice
  • salt n pepper

  • 150g Pasta (shells)
  • *30g cheese n onion crisps - crushed(optional)


 Method

1. Wrap each salmon fillet with salt n pepper, squeeze of lemon juice, dill, sprig of fresh rosemary, garlic and a slice of lemon in foil.

2. Place the salmon foil wraps into the steamer and add 4 large florets of broccoli into the steamer.

3. Heat a medium sized saucepan and cook the pasta as intructions on the packet.

4. When the steamer has 10 minutes to go grab a small saucepan and melt the butter. Add a half the milk then stir in the flour until it begins to thicken up. Then add the rest of the milk, mustard and half the grated cheese. Bring to the boil, reduce heat and stir until it thickens once more.

5. Remove the broccoli and salmon from the steamer. Carefully chop the broccoli and flake the salmon. Add them both to a casserole dish. Then add the cooked pasta and pour over the sauce. Sprinkle over the remaining cheese and crisps (optional) and place under the grill until the cheese has melted.

6. Serve in a large bowl and enjoy.
